So here’s finished .. I finally found out how exactly to bake with coconut flour. I experimented with it once before but after that I sort of gave up because I held having recipe screening failures. Whomp, whomp.
A few weeks ago I spotted coconut flour in the shelves at Trader Joe’s and made a decision to pick it up and do some experimenting. And do you know what? I’m totally head over heels obsessed! I’ve make pancakes, waffles, cookies, and Pubs. Last week I purchased four bags. GET AT ME TJ’S.
Of course with any formula I produce, I had a need to test out a few different versions.
Typically with coconut flour you need to use several eggs as the coconut flour holds an insane amount of moisture. When I say several, it means 4-6 per formula; that’s a large amount of eggs and I didn’t want these pubs tasting as an omelette. Instead I opted to use only two eggs and also a small coconut oil and honey (or maple syrup) to greatly help bind the bars and maintain them super moist.
And after the third round of tests, they arrived just perfect!

Ingredients
1/3 glass honey, agave nectar or maple syrup
2 teaspoons vanilla extract
2 eggs, slightly beaten
1/2 cup coconut flour
½ teaspoon cooking soda
¼ teaspoon salt
3 oz your favorite dairy free chocolates club, coarsely chopped
1/2 cup coconut flakes, optional
Instructions
Preheat oven to 350 levels F. Apply 8×8 inch baking pan with non-stick cooking spray.
In a large bowl, whisk together coconut oil, honey, vanilla, eggs, and almond milk. In a separate medium bowl whisk jointly coconut flour, baking soda, and salt. Add dry ingredients to wet elements and mix until just mixed and batter can be smooth. Flip in chopped delicious chocolate, reserved a few tablespoons for sprinkling on top if desired.
Bake for 20-22 mins or until sides are golden brown and knife arrives with several crumbs attached. The batter may look like it’s not completely cooked nonetheless it is going to be. USUALLY DO NOT OVERBAKE or it’ll lead to dried out pubs no one loves that! I always bake mine for 20 minutes and don’t have any problems. Awesome bars on a cable rack for at least ten minutes in order that they settle a bit, then cut into 16 squares. Enjoy!
I used Trader Joe’s Coconut Flour.
I love to sprinkle extra chocolates chunks at the top or melt a little extra chocolate and glaze it over the top from the bars. These are also specifically delicious having a sprinkle of sea salt at the top.
Coconut flakes aren’t included in nutritional info, but the chocolate is.

Where are the optional coconut flakes supposed to go? In the dough or sprinkled at the top? They are not really mentioned again in the recipe.
Just made these after seeing so many people make them in Instagram! I love them! I had been determining between these as well as the chickpea blondies, so I definitely see the blondies taking place sometime in my own future!
