I need to determine a way to unplug from all of the communication sometimes. Or simply find a balance. When I’m not working on my site, I’m continuously plugged in for my other job. In so far as i tell myself that I need to have a break and rest, it’s hard to stage away from the chaos of work as well as the busyness of life; I’m sure many of you can associate!
Usually the thing that gets me from everything may be the chaos of my very own kitchen – my own small sweet happy spot. When I put on a little music and commence to dice and chop, my creative energy pours into pots and pans, creating good food for loved ones.
This stew was made during an evening when my mind was cluttered and I needed a release. I put a busy time full of conferences. Okay and I was also dreaming about when I would actually get those gal scout cookies I ordered – like just how long it would consider for me to destroy 5 containers this season? Whattttttt? Lady scout cookies are difficult to think about.
Anyway there was a jar of lentils that were sitting in my cupboard along with gorgeous organic special potatoes from Whole Foods. It was time to place the iPhone down. A pleasant container of stew was an adventure I was ready to take on.
Mmmmm how I really like the taste profile of the stew! The coconut dairy, curry, nice potatoes, and a touch of cinnamon give it a slightly nice flavor that’s both light and delicious. The coconut milk is normally pureed with a number of the lovely potatoes, then added to the broth to give it a creamy, velvety consistency.
Ohhhh and who could overlook the lentils? They’re the star right here! Lentils are flawlessly healthy, low in calories, packed with minerals and vitamins, and filled with fiber!

Ingredients
2 pounds special potatoes (about 5-6 medium lovely potatoes), peeled and diced into 1 inch cubes
1 teaspoon olive oil
1 huge onion, chopped
3 cloves garlic clove, minced
1 tablespoon curry powder
3 1/2 cups veggie broth
1 1/2 cups green lentils (or anything you have on hand)
1/2 cup light canned coconut milk (I get mine from Trader Joe’s)
1/4 teaspoon cinnamon
Instructions
Heat olive oil in a large pot over medium-high temperature. Add onion can carrot, and half of the diced nice potatoes and saute until the onions commence to soften and change translucent about 4-5 a few minutes. (Take note: the other half from the diced sweet potatoes will be reserved for later pig feet On Stove make use of.) Add the garlic clove, ginger, curry powder, tumeric, and sodium and saute for 2 minutes longer; stirring frequently.
Next add more the veggie broth and lentils, and bring to a boil over high temperature. Cover the container, reduce high temperature to moderate low, and simmer for 30-45 a few minutes or until lentils are tender.
While stew is simmering, produce the coconut-sweet potato broth: Place a medium pot over high temperature and fill with drinking water, bring water to some boil and add in the rest of your diced nice potatoes that you had reserve. This make take more time based on how small you slice your nice potatoes. Once tender, drain water from lovely potatoes, and place them into a food processor chip. Add coconut milk and cinnamon and puree until it forms a relatively smooth regularity. Next add the sugary potato coconut puree to the stew, and continue to prepare to thicken broth a little.
The stew is performed when all of the lentils are tender, as well as the broth has thickened. Time of year soup to taste with additional salt and/or pepper. Scoop into bowls, and garnish with new natural herbs and greek yogurt if desired.
