This last weekend I spent my time catching up with a pal and enjoying a short visit to DC. I unquestionably love weekend trips! Heat olive oil in huge skillet over moderate heat. Last time I was in California We met up with Veronica, the founder of the vegan, gluten-free Pure Bar s. She is a one who really inspires me. I’ve already got some bars packed for my next experience. It’s finally Springtime, and I’ve a whole lot of horsing around to do.
Do you realize DC includes a cherry blossom celebration? This year it’s a century old. The stunning trees are almost everywhere around the city. I checked it out last weekend and highly recommend it. I want to know if you are ever in DC and I’ll point you in the proper direction.
Obviously the above picture is not in DC. It’s me dreaming of an unique holiday that I’ll need to plan when i finish consuming these cupcakes.
1 1/2 cups of all-purpose flour (gluten-free if desired)
1 tsp cooking soda
3/4 cup sugar
1/2 tsp salt
1/3 cup canola oil (or healthy alternative oil such as for example coconut)
2 tsp vanilla
2/3 cup coffee
1/4 cup softened vegan margarine (Earth Balance)
1/4 cup vegan cream cheese, softened
2 cups powdered sugar
1 tsp vanilla
Directions
Preheat oven to 350 degrees F. In huge dish whisk flour, cooking soda, cocoa natural powder, sugar and sodium together. Set aside.

I’m a large fan of apple sharp and the simple making it. (Well, besides chopping and slices the apples, of course.) I always find it to become the coziest from the comfort desserts; warm, full of cinnamon spice and simply the best using a big scoop of vanilla snow cream.

BUT the real query here’s: Who on earth will eat all that apple crisp?! When your home is with only one other person it could be hard to demolish a pan by yourselves. That’s where this apple sharp recipe will come in. And rather than the normally apple crisp version LOADED with butter and sugar, I dialed it back a bit and used clean ingredients:

Maple syrup and coconut sugar instead of processed sugar.

Whole wheat grains instead of regular flour.

Coconut oil rather than butter.

And when you’re up for it, coconut milk caramel for a little glaze on top. (!!!) That means this recipe is dairy free of charge too!

The most important section of this recipe though is the apples! DUH.

The apples have to be sweet and crunchy – which explains why I used the best SweeTango® apples I mean, if you haven’t got the opportunity to try them – you absolutely must! You’re generally able to find them more within the fall, so look at your supermarket. And please, please, please – get this to apple crisp!

Vanilla Coconut Dairy Caramel Apple Sharp For Two

2 large SweeTango apples, peeled, cored and thinly sliced

2 tablespoons pure maple syrup

2 tablespoons coconut sugar

1 teaspoon vanilla extract

1 teaspoon coconut oil

For the apple crisp:

Preheat oven to 350 levels F. Grease two small skillet pans, medium ramekins OR a little quart size dish with nonstick cooking spray.

To create topping: Combine the flour, oats and brown sugar in a big bowl until well-combined. Add in melted coconut oil and stir before mixture is definitely crumbly and resembles wet sand.

Make the filling by placing the sliced apples, maple syrup, cinnamon and vanilla in a big dish and toss to mix. Take 1 tablespoon from the topping mix and toss using the apple mixture. Place the apple mixture in prepared pans (equally deliver) and sprinkle with the topping. Almond Butter Delicious chocolate Chip Proteins Cookies

Ingredients
1/4 cup coconut sugar
1/4 teaspoon of sodium (only if your almond butter isn’t salted)
1 large egg
1/2 teaspoon vanilla extract
2 tablespoons coconut flour
1/2 teaspoon baking soda
2 tablespoons delicious chocolate chips
Optional add-ins: 2 tablespoons of dried cherries and/or coconut flakes
Instructions
Preheat oven to 350 degrees F. Collection a baking sheet with parchment paper.
In a moderate dish, combine almond butter, coconut sugar, salt, egg, almondmilk and vanilla extract. Blend until substances are well combined. Next mix in protein powder, coconut flour and baking soda pop until well mixed. Fold in chocolates chips.
Use a small cookie scoop to drop cookie dough from the tablespoonful onto ready baking sheet. The dough will be somewhat sticky. Somewhat flatten the tops of the cookies. Bake for 9-11 a few minutes until slightly golden brown within the sides. Allow cookies to great on cookie sheet for five minutes before moving to a cable rack to finish chilling. Makes 12 cookies.
For the protein natural powder: I tested these cookies with the next proteins powders with good results: Vega Coconut Almond protein natural powder, Aloha vanilla protein natural powder and Bob’s Red Mill Whey protein powder. I like using the vegan protein powders for more nutrition.
These cookies get softer as times pass. Store them within an airtight box or freeze them and thaw one out when you wish to enjoy.
I would not recommend subbing any other flour for the coconut flour.

Stuff our face with Mexican goodness and guzzle skinny margaritas. Duh.

Don’t become you are not intrigued with breakfast enchiladas. Psssstt… they’re healthful too! The people who taste tested these for me even approved, buuuuttttt I have a sense Paula Deen would not. Sorry Paula, we’re conserving our calorie consumption for margaritas.

Let’s be honest with eachother for a moment. There is absolutely no pretending that people won’t chase down everything with alcoholic beverages come Sunday. Margaritas with breakfast? Why not? it’s Cinco de Mayo and I love to pretend I’m Mexican! Seriously, we know how this vacation works… and how unpleasant Sunday is going to be.

Forget about hangovers. Concentrate on a breakfast time that gets you ready for a day filled with delicious chips and guac. Since Cinco de Mayo is actually this Sunday (and because I prefer a week full of celebrations), I thought I’d share this along with you a little early.

I had been thinking about breakfast time enchiladas for quite sometime. Similar to fantasizing about them every evening. Anyway I made a decision to wrap the traditional huevos rancheros breakfast time (eggs + beans) into tortillas and insert them with delicious business (also known as crimson sauce and avocados).

I’m really pleased with that decision because We now want to consume these everyday for the others of my entire life. And I could do that because they just have about 230 calorie consumption per enchilada. Yes!

Let me break it down for you personally.

Whole wheat tortillas (because we’re healthful whole grain eating people, duh).

Fluffy scrambled eggs (with mostly protein packed egg whites).

Refried dark beans.

Low fat cheeeeeese.

Uhhhh may i just tell you that basically these enchiladas are produced from the best stuff on earth?

This is actually the fun part. The delicious business.

We combine the items I dream of into the tortillas. Drizzle with LOTS of reddish sauce, and move them up tight. Time to pop in the oven and get ready for a tastebud party in under 30 minutes.

Skinny Huevos Rancheros Breakfast Enchiladas

6 whole wheat tortillas (I love low carbohydrate, or you might use corn tortillas to create these gluten-free.)

2 whole eggs + 6 egg whites

1 can (16 oz) good crimson enchilada sauce

1 can (16 oz) refried dark beans

1/2 red bell pepper, diced

1/2 cup cilantro, chopped

3/4 cup low-fat cheese (I like colby jack or mexican)

Pinch of salt

Directions

Preheat oven to 350 levels F. Combine refried coffee beans, diced reddish peppers, cilantro, and jalapeno jointly in a big bowl; reserve. In a moderate bowl beat your eggs jointly. Coat large skillet with non stick cooking aerosol and add your eggs. I’ve been on a quest to travel even more; there’s something about any of it that feeds my spirit, filling it with understanding, contentment, experience and love. I am to the Caribbean, Az, Minnesota and Texas all in the last month. I’ve valued every moment, each airline flight and on the way discovered that I value experiences over stuff, as I understand that I’ll remember these moments as long as I live. Cheesy very much? Ha.
I want to share with you the last section of my visit to the Caribbean with Princess Cruises. The first section of my trip was about the excursions and what we do at each port This time around I’m excited to enable you to get a glimpse into the meals we ate as well as the recollections we made jointly! Now, about the food!
There really isn’t anything bad to say on the subject of the food for the cruise ship. There was a wide array of restaurants with a number of different culinary designs including italian, steak and sea food, a pastry shop, pizza, gelato and coffee bars. I under no circumstances once felt limited to my dining choices, especially when it found the buffet which was packed with fruits, veggies and newly prepared worldwide cuisines. DELICIOUS.
As you know, my mom came on the trip with me. She’s mostly a vegetarian but she never experienced deprived and was usually able to require things made vegetarian. The chefs were wonderful this way.
Even at the restaurants, I could have lighter lunch choices. This was one of my favorites – a dark bean taquito like dish. These were baked instead of deep-fried, vegetarian and full of flavor!
Another thing I loved had been able to enjoy four or five 5 course meals. Seriously, it was food overload.
We also experienced the Chef’s Desk , which pigs feet do you eat is an intimate dining experience including a custom made menu with wine pairings. We had been even invited in to the kitchens; it had been immaculate and smelt amazing.
We received champagne and small bites to test while we watched them prepare pasta.

I just want to quick mention one of my favorite goodies too!
While at St. Maarten we got probably the most fabulous gelato; I opted for caramel and coconut. My mom got the cherry amaretto and it had been basically the BEST gelato I’ve ever tasted in my own lifestyle. Granted I haven’t been to Italy yet.
Either way, it had been a wonderful experience and I remaining the island happy. My only regret is not getting out to the other side of the island to see the real meals. I always want to enjoy food like a regional and actually diverge myself into the culture.
While back in the ship, my two beloved go to snacks were a small greek salad and unlimited soft serve. The salad was refreshing and great with refreshing shrimp. Also, I really had to make sure I was eating lighter lunches due to my 5 program dinners and desserts twice per day.
Oops.
Because I favor soft serve glaciers cream and frozen yogurt, the unlimited small cones were such a nice refresher especially after installation of all day. Also… SPRINKLES!

July is officially here! I booked a trip for a fun adventure. I’ve two jobs I love. Plus, I produced you truffles, cookies, tacos, and this easy & fun Summertime berry crostini.

Besides being truly a grocery store stalker, I was quite busy this past weekend. The majority of my Fri was spent operating then I caught a movie and stayed until my eyes felt like heavy bricks. Saturday passed as well quick; I strike a yoga class in the morning, did some editorial planning for the blog, and viewed an episode of Pet cats from Hell. NOT KIDDING. I love cats.
I had just a little ‘me’ period yesterday though and spent most of my day time in your kitchen. I’m trying to get caught up on recipe creation in order that I could take a small vacation over the weekend and relax. My amazing mom also ended over to show me her StitchFix collection (I acquired her connected!). We haven’t noticed each other in nearly fourteen days so that it was good to catch up. It is important to remember it is possible to never be too busy for your family. However, you can be as well busy for Pigs feet when your mom tells you about how very much she adores Jeremy Piven.
Wanna know what I’m really excited about though? The 4th of July! I can’t wait it absorb the sun with good meals and even better people.
Creamy low-fat ricotta is definitely mixed with a bit honey and new lemon juice then piled about toasted slices of wholegrain french bread. It’s crunchy, creamy, and sugary all at the same time. And imagine how long it takes to whip these up? Just 15 minutes!

Ingredients
2 demi (petite) multigrain or wholegrain french baguettes, lower into about 24 little slices, about 1/4 inches thick
1 tablespoon olive oil
1 tablespoon honey, plus extra for drizzling
pinch of salt
Instructions
Preheat oven to 425 degrees F.
In medium dish, mix collectively ricotta, lemon juice, a tablespoon of honey, along with a pinch of salt. Flavor; adjust flavors as necessary. You may want more lemon or honey.

Every night when I go to bed I believe about food combinations. I’m not joking. Pairing meals combinations together ultimately lull me into a gorgeous sleep. In fact since we got our bed from Helix , I’ve been sleeping like a true angel!

But I have pointed out that my dreams have become a lot more vivid – and weird too. Check this out: The various other night I had fashioned a dream which i was Miley Cyrus (but still myself somehow) which I converted into a blue robot on an isle. I had developed two other friends that I didn’t know right now there. Suddenly several additional blue robots came and explained I could choose to perish (very gruesomely) OR that I could take two items and swim across the ocean to another island. I find the second item and required a sand bucket and something else I can’t remember. I grabbed my friend and we managed to get across.

Once on the other side of the ocean and on a new isle, we noticed there is a beautiful however murky-looking pond. We went swimming, but abruptly felt something touch our toes. I informed everyone I thought it was a stingray. We couldn’t be sure though, so decided to drain the fish-pond in some way. Once drained, five arbitrary animals (a stingray, alligator, and a man from Mortal Kombat) popped out of the drinking water and wanted to fight. It had been super dramatic.

Then I woke up and ate toast with chai-spiced hazelnut almond butter and pears. Today you understand that I’m truly a weird human.

Anyway enough about my dreams and more about this hazelnut almond butter! I managed to get because I had a bag of hazelnuts sitting in my counter before we relocated and wished to make something together. So, you will want to make a straightforward buttery hazelnut almond butter?

While I really like hazelnuts, I discover that enjoying them alone is often overpowering, www.shiki-longisland.Com especially in a nut butter (unless it’s delicious chocolate obviously). THEREFORE I added almonds as well. And chai spices! I believe you’ll enjoy it because it in some way reminds me of Xmas morning hours or sipping on a chai tea latte on the chilly fall morning hours. Chai-Spiced Almond Hazelnut Butter

Ingredients

1 teaspoon floor cinnamon

Instructions

Preheat oven to 350 degrees F and add hazelnuts and almonds to a big baking sheet, spreading out to evenly distribute. Roast for 10-12 mins or until somewhat golden.

Enable nuts to great for 5 minutes then transfer to a kitchen towel. Cover nut products in towel and use your hands to move the nuts around so you remove the skins from the hazelnuts (don’t worry about almonds). This can help to achieve a creamier nut butter. Keeping the skins on is okay though, simply know your nut butter won’t be as creamy.

Once a lot of the skins are off the hazelnuts, it is possible to transfer the nuts to the food processor or high speed blender (like a Vitamix). Procedure on high until smooth, scraping down the sides as necessary. Add coconut glucose & coconut essential oil to aid in blending. At this point the nuts should begin to clump collectively. Continue to process until you reach the required consistency. I love mine extra creamy!

Once nut butter is blended, add in the spices and sodium and mix for 30 mere seconds more. Pour right into a large cup jar or pot. To keep new, store within the fridge for 1 month. Not really that it would last that long.

Not long ago i attended the BlogHer Meals meeting in Austin, Tx. It was a complete blast! I ate glaciers cream sandwiches the size of face, listened to founded bloggers speak, met Pleasure the Baker (my cooking inspiration), and so many talented ladies who love food just as much as I really do.

Here we have been with Ree, also know as The Pioneer Woman I also had the opportunity to meet her amazing sister Betsy, who works Tasty Kitchen Both were fairly sweet and full of smiles.
I actually roomed with Christy from THE LADY Who Ate Everything , Carrian from Oh Lovely Basil , and Kristy from Nice Treats and More I cannot let you know how much fun we had staying up past due, laughing, and taking in so many Udi’s Snickerdoodles cookies (GO BUY THEM).
