A lightened up coconut oatmeal healthy banana loaf of bread with a couple of chocolate chips – you don’t need to experience guilty enjoying a slice or two!
You guyssssssss. I’ve made a lot of banana breads during the last few days. Occasionally I wish I could quit baking however when I obtain the desire to, I just can’t prevent. I think I’m an addict.

Due to my cooking urges, I’m often up past due at night; however I do not get the opportunity to photo the recipe since it’s dark and because I’m a small amount of a perfectionist. But occasionally I just desire to talk about a recipe with you right away so I got these photos with my iPhone… hope you don’t mind!
This coconut oatmeal banana bread is merely fantastic. I’ve managed to get twice over the past two days and my boyfriend unquestionably adores it. Little does he know it’s healthy! Hehe I earn the best sweetheart award.
To keep carefully the bread on the lighter side, I used oats, minimal sugar, coconut milk, and greek yogurt. There’s only a little more than a tablespoon of coconut essential oil in the complete recipe! For a little indulgence, I added mini delicious chocolate potato chips and coconut because who doesn’t love a little chocolates?
The sprinkle of coconut is lovely on top since the coconut toasts once the bread bakes.
If you wish to ensure it is even healthier, try updating some or every one of the flour with whole wheat grains pastry flour or white whole wheat grains.

Ingredients
1/4 teaspoon cooking soda
1 1/2 tablespoons coconut or olive oil
2 teaspoons vanilla extract
extra coconut flakes and chocolates chips, for sprinkling
Instructions
Preheat oven to 350° F. Grease a 9 in . loaf pan with nonstick cooking spray.
In medium bowl whisk jointly flour, oats, baking powder, baking soda, cinnamon and salt; set aside.
In large dish, beat together mashed bananas, darkish sugar, oil, vanilla, and egg whites until well combined. Mix in greek yogurt Beef liver and cholesterol coconut milk.
Add dried out ingredients to the wet, and mix until just combined. Gently flip in coconut flakes and chocolates potato chips. Sprinkle a tablespoon or two or chocolates chips and coconut together with the loaf of bread, if desired. (I really like it as the coconut gets toasted once you bake it.) Pour batter into ready loaf pan and bake for 45-60 mins or until blade comes out almost clean with several crumbs attached. Cut into 15 pieces and enjoy!
Feel free to substitute fifty percent of the flour for whole wheat grains. Just add another tablespoon of milk.
can this be produced with gluten free of charge flour
in that case, which kinds could you recommend using and how much of each
I am baking this now, as I type. Can’t wait around! I’ll let ya understand how it turns out.
Also, I think the amount of salt was inadvertently omitted. I bake quite often, so, I eyeballed the amount.
