My day begins by waking up at 5:30am. I utilized to dread the first mornings but nowadays I find myself rather taking pleasure in peeling the addresses off, sleepily milling coffees and making a container, feeding the kitty and heading out the entranceway for my workout.
The schedule keeps me motivated and encourages me to visit bed in a decent hour (most of the time anyway). I’ve also found that I enjoy getting the rest of my time free to work without the expectation of exercising later on. Occasionally I do rest in until around 7am, but it’s getting more rare.
After I get home from my workouts, I crave my breakfast so it is easier to own it prepped then to make it. I’m not really resting when I say I start considering breakfast before I go to bed. It’s the best meal of your day and I love switching it up with eggs, smoothies and undoubtedly, my much loved oatmeal.
Because Fall is slowly beginning to creep onto our calendars, I wanted to bring you my first pumpkin formula of the growing season together with my close friends at Better Oats ! I am hoping it’s not too early to shove all pumpkin-related issues in your face, but if you’re any thing like me, then you understand it’s never prematurily . for pumpkin.
These pumpkin over night oats were in the fridge waiting for me to devour when i got house from a sweaty, ass-kicking workout including too many container jumps and squats for my liking. As soon as I acquired in the door I whipped open up the refrigerator, topped the pumpkin right away oats with toasted pecans, provided it a good stir, and dug in! Whoa, this likes as being a cut of heavenly creamy pumpkin pie. For breakfast!
Whoooo hooo!
A little about this recipe:
Organic Better Oats : We used Organic TRADITIONAL Better Oats in this recipe. In addition they make oatmeal packets, which make it convenient to defend myself against the go. I used to consume them all the time in university and they’ve been a staple in my cupboard for a longgggg time. I’m pretty sure their steel-cut oats would also work, but just result in a chewier, less heavy texture.
Greek yogurt: We used organic simple greek yogurt for just a little increase of protein and to keep the oats creamy. Believe me, the yogurt is essential. If you’re dairy products gluten free eggless cheesecake, use a coconut or almond dairy yogurt.
Chia seeds: These help set the creaminess and keep carefully the mixture thick. If you are not into chia seed products, you could try flaxseed meal (floor up flaxseeds).
Pumpkin puree: Please don’t use pumpkin pie combine! Opt for genuine pumpkin right here. I purchase canned pumpkin because of its convenience
Optional add-ins: dried out cranberries, coconut flakes, pecans, almond or peanut butter, a teaspoon of chocolate chips, a little whipped cream on top! Produce it
One last thing! If you’re into food prep like me, here is a suggestion: Make several jars on Sunday night and keep them covered within the fridge for up to weekly. Nosh on them when you do not have any time to cook in the mornings, take them to operate to enjoy or just consume them for dessert (and best with a little whip!).
Either way, you are going to love these healthful pumpkin over night oats! If you make sure they are or any various other formula from AK be sure to label #ambitiouskitchen on Instagram therefore i can easily see your picture! xo.

HI There,
We love pumpkin and LOVE overnight oats! Tried this recipe last night and discovered it to be lacking just a little sweetness. We don’t want to add an excessive amount of more maple syrup or any artificial sweetners…so we were questioning if anyone acquired any ideas for fruit we’re able to add to bring some more sweetness towards the recipe.
