Usually the only thing that gets me from everything may be the chaos of my very own kitchen – my own little sweet happy spot. As soon as I put on a little music and begin to dice and chop, my innovative energy pours into pans and pots, creating good meals for family members.
This stew was made during an evening when my mind was cluttered and I needed a release. I put a busy day full of conferences. Okay and I was also fantasizing about when I would actually obtain those lady scout cookies I ordered – like how long it would consider for me to destroy 5 boxes this year? Whattttttt? Woman scout cookies are difficult to take into account.
Anyway there is a jar of lentils that were sitting in my own cupboard along with gorgeous organic sweet potatoes from Whole Foods. It had been time to put the iPhone down. A lovely pot of stew was an adventure I was ready to take on.
Mmmmm how I love the taste profile of this stew! The coconut dairy, curry, special potatoes, and a touch of cinnamon provide it a slightly lovely flavor that’s both light and delicious. The coconut dairy is normally pureed with some of the sugary potatoes, then put into the broth to give it a creamy, velvety texture.
Ohhhh and who could forget about the lentils? They’re the star here! Lentils are perfectly healthy, lower in calories, packed with minerals and vitamins, and full of fiber!

Ingredients
2 pounds nice potatoes (about 5-6 moderate lovely potatoes), peeled and diced into 1 inches cubes
1 teaspoon olive oil
1 large onion, chopped
3 cloves garlic clove, minced
1 tablespoon curry powder
3 1/2 cups veggie broth
1 1/2 cups green lentils (or anything you have readily available)
1/2 cup light canned coconut milk (I get mine from Trader Joe’s)
1/4 teaspoon cinnamon
Instructions
Heat essential olive oil in a large container over medium-high temperature. Add onion can carrot, and fifty percent of the diced lovely potatoes and saute before onions begin to soften and change translucent about 4-5 mins. (Notice: the spouse from the diced sweet potatoes will be reserved for afterwards use.) Add the garlic, ginger, curry natural powder, tumeric, and sodium and saute for 2 mins longer; stirring frequently.
Next combine the vegetable broth and lentils, and bring to a boil over high temperature. Cover the container, reduce temperature to moderate low, and simmer for 30-45 a few minutes or until lentils are tender.
While stew is simmering, produce the coconut-sweet potato broth: Place a moderate pot over high temperature and fill up with water, bring water to some boil and add in the rest of your diced sweet potatoes you had reserve. Reduce temperature to moderate, cover, and continue to cook for about 8 mins or until special potatoes are sensitive and nearly dropping apart. This make consider more time depending on how little you cut your sugary potatoes. Once tender, drain drinking water from special potatoes, and place them into a food processor. Add coconut dairy and cinnamon and puree until it forms a relatively smooth regularity. Next add the sugary potato coconut puree to the stew, and continue to prepare to thicken broth a bit.
The stew is performed when all the lentils are tender, and the broth has thickened. Period soup to taste with additional sodium and/or pepper. Scoop into bowls, and garnish with fresh natural herbs and greek yogurt if desired.
In the UK we don’t get those cookies!
Probably a good thing – I shouldn’t be allowed by itself with cookies in any case…
Recipe is amazing, than you! Was really fast and simple to do, Preferences ike it will have been very much harder. Made plenty of for dinner for four and lunches as well
