I cannot remember the last time I slept history 9am! Ever since my kids had been born, I am up early, my showers are rushed, breakfast is normally rushed, and we struggle to escape the door promptly every morning. Will this audio familiar to anyone?
That said, I love being a busy mom of two young boys and wouldn’t trade it for the world!
Offering healthy and hearty breakfasts to the kids during the college week is tricky. We moms usually go for quick breakfasts, like cereals, granola bars, oatmeal, frozen waffles or pancakes. Breakfast time may be the most important food of your day, but who has time to make a popular and hearty breakfast every morning before heading out the door? I need something I possibly could get and warm up quickly, whilst getting the kids ready.
These mini frittatas are the perfect breakfast to make ahead of time to serve on active weekday mornings, and everyone will like them! You can eat them refreshing from the oven, or store them in a box in the refrigerator or refrigerator, and utilize them as required. Simply reheat them within the microwave and they’ll taste almost as good as when you first made them.
These small bites aren’t just great for kids within the mornings, but additionally to take to work, or simply to have at home for the entire family to eat for breakfast, lunch, or like a snack.
Bacon, ham, cheddar and mozzarella together are one of my favorite mix of substances and what I used to make these frittatas. Bacon, Ham and Cheese Mini Frittatas
1/4 cup diced bacon
5 oz. bacon, diced and cooked until crispy and drained
In a large bowl, combine all ingredients and stir well.
Spray a muffin tin with cooking food spray.
Divide egg mixture between your 12 muffin cups evenly. Put in place the oven and bake for 15 to 20 minutes.
Serve them immediately or shop them within an airtight container in the refrigerator or freezer.
