If there’s one thing I learned about myself during my health journey, it’s that I absolutely will need to have snack foods (like these peanut butter energy bites) available or I become an out of control raging hypoglycemia animal. Believe Tom Cruise blended with a wolverine. Extremely scary stuff.

Ever since I’ve been little, my blood sugar levels has always been on a rigid 3-hour dive plan. Such as, I’m the sort of person who really needs something to eat every few hours or I’ll crash. My mom says that whenever she brought me somewhere, she always experienced to make certain that she got food with her in any other case I’d ruin your day and toss a fit. Terrible, right?
But it’s true! WHILE I get starving, I cannot think, make decisions as well as pretend to be in a good disposition. I’ve seen the physician several times about any of it and apparently that’s just just how my body is definitely. Wacky.
Needless to say, it I’m working at home it’s pretty easy to grab snack foods, but a few times I am in circumstances where I had been definately not both house and food (especially when traveling). To avoid a meltdown into food cravings oblivion, I started creating my very own little energy bites and trail mixes to bring with me anywhere I proceeded to go. Not only are they a lifestyle saver, however they also help me make better food options (rather than reaching for processed foods).
These wonderful energy bites are my newest creation and loaded with some of the best things: peanut butter, coconut, flaxseed, chia seed and even a little chocolate. I’ve also produced them with almond butter, but everyone understands peanut butter reigns ruler on Ambitious Kitchen.
Watch me make the energy bites here:
Bonus points: They’re freezer friendly. YAS.

Total time:

Ingredients
1/4 cup coconut palm syrup (honey also functions)
1 teaspoon vanilla extract
1/3 cup flaxseed meal
1/2 cup rolled oats (gluten free, if desired)
2 tablespoons mini chocolates chips (vegan, pigs feet new years if desired)
1 tablespoon chia seeds
Instructions
In a big bowl, mix collectively peanut butter, coconut palm syrup and vanilla extract until well combined. Add protein powder, coconut, flaxseed meal, oats, chocolate potato chips and chia seeds. Blend until well combined. I usually have to make use of my hands to combine and work with the dough. You now should be able to type balls that stick jointly. Because all peanut butter/nut butter consistencies are different and depending on what proteins powder you use, you may want to add in even more nut butter or sweetener to help the balls stay together.
Type into 14 balls and place in an airtight pot. Store within the fridge for up to a week, or the fridge for a month. Enjoy!
For the protein natural powder, I normally use Aloha’s Vanilla protein natural powder (vegan). Bob’s Red Mill unflavored Whey proteins powder can be great. Unless you have any protein natural powder, these balls ought to be just good without it as well, even if you have to add more oats.
For the nut butter: I used an all-natural drippy peanut butter with only peanuts and salt. The natural kind without additives is most beneficial for this formula.
This recipe could be made nut free by using sunflower seed butter and nut free chocolate chips.
