These were originally simply going to be healthy Pumpkin Pancakes with several Dark Chocolate Chips (just a few).

1/2 cup canned pumpkin
1 tsp vanilla extract
60-70 chocolates chips if desired (I prefer dark chocolate)

They are done and perfect when golden brown on both sides. Arranged oven to warm (200 degrees F) and place pancakes on plate in oven to maintain warm before rest of the pancakes are performed cooking.
Enjoy using a big glass of dairy! No toppings required.
Makes 9-12 pancakes.
