Apricot Lemon Coconut Granola
1 tablespoon lemon juice
2 teaspoons maple syrup
2 tablespoons chia seeds
2 tablespoons flax seeds
Preheat oven to 350 degrees Fahrenheit.
Add the apricots, coconut oil, lemon juice, maple syrup, and cinnamon to a higher powered blender or food processor and mix until combined along with a sauce is formed.
Add more oats, cashews, almonds, chia seeds, flax seed products, and salt to a large dish. Add apricot blend and mix until well mixed.
Line a cooking sheet with parchment paper and pass on granola mixture away evenly. Bake for quarter-hour.
Remove from oven and add coconut flakes while stirring and flipping the mixture. Make sure coconut is combined in well and not completely uncovered or it will burn. If you want even more chunky granola, leave in larger chucks when stirring.
Bake for another ten minutes, turn off oven and allow it sit within the range to cool. It will harden as it cools.
Store within an airtight pot for weekly. Enjoy!
