Last week my best friend’s mom asked once i was going to start seriously dating someone that I had been simply sort-of seeing?
Ummmm I have no idea, I simply turned 24? And what is this – an intervention? I mean is there a deadline which i missed out on that says you have be in very serious relationship by way of a specific age? Can’t it all be informal and cool? I like going on times, I’m just not on the marriage train. I favor to reside in the truth that love is really a fairy tale, you know after I run after down all of my dreams and travel around the world.
Speaking of love, Valentine’s Day is approaching! Quick, Let’s eat salads before we overcompensate by shoving heart-shaped Reese’s inside our mouths!
Just kidding… Sort of?
Lately, I have been a complete train wreck. Okay definitely not in a bad method though; I’ve just been concentrating on prioritizing my projects for work AND keeping up with the blog. Juggling them can be difficult & most of the time I find yourself focusing on the weekends with little time for guzzling the best margaritas. Wait, given that I think about it… aren’t margaritas important? Hmmmm. I’ll have to ponder that one.
Anyway this whole getting my entire life organized issue has forced me to become extremely prepared since I’m always on the go. This includes producing my meals ahead of time: oat muffins for the morning, greek yogurt with caramelized almonds to get a sweet afternoon snack, and this fairly superfruit and nut salad that I’ve enjoyed chowing straight down on for lunch.
The salad was inspired by a fresh peach and strawberry arugula salad I made last summer for some friends. I put utilized peaches, balsamic vinegar, and essential olive oil to create the dressing. So to recreate it, the only change I produced was to sub in the blueberries for the peaches.
Ohhhhh you men, that blueberry balsamic vinaigrette is just so excellent! But it’s not the only thing that’s delicious. The salad is definitely packed with good-for you issues including:
Blueberries: they’re loaded with supplement C & K and filled with dietary fiber and antioxidants. Hello gorgeous skin!

I finished the salad having a bit of goat cheese, and I have to inform you, it was what pulled everything together! It simply pairs perfectly with the blueberry vinaigrette for any tangy and lovely bite. Plus, you get the delicious crunch from all the good-for-you nuts. I just loveeee it! Nevertheless, you know if mozzarella cheese isn’t your thing, simply omit!

Cook time:
5 mins
Total time:
10 mins
Ingredients
6 cups organic arugula or 1-10 oz handbag of organic arugula
1/2 cup dried cherries
2/3 cup refreshing organic blueberries
3 tablespoons roasted sunflower seeds
3 tablespoons toasted sliced up almonds
goat mozzarella cheese, for topping
1/2 cup new organic blueberries
2 teaspoons essential olive oil
pinch of salt
Instructions
In a big bowl add arugula; top with dried apricot, dried cherries, and refreshing blueberries. Toss lightly.
Next produce the blueberry balsamic vinaigrette simply by placing jam, blueberries, essential olive oil and balsamic vinegar right into a food processor or blender and pulse to mix. Put in a pinch of sodium, and if required adjust vinaigrette to your preference by adding additional fruit and/or balsamic vinegar.
Drizzle a few of dressing all over salad and toss gently to combine. I always start with a small amount of dressing and add more if required. The trick would be to remember that it is possible to always add even more, and a bit goes a long way. You don’t desire a soggy salad!
Sprinkle almonds and sunflower seed products outrageous from the salad. Place salad into chilly bowls and sprinkle on goat mozzarella cheese if desired. Enjoy!
LOVE the flavors! I’ve a recipe discovering goat parmesan cheese and I purchased blueberries to make use of with it, but finished up forgetting to include them…gah! And balsamic is usually my fave.
