Stuff our face with Mexican goodness and guzzle skinny margaritas. Duh.
Don’t become you’re not intrigued with breakfast enchiladas. Psssstt… they’re healthy too! The guys who taste examined these for me even approved, buuuuttttt I’ve a sense Paula Deen would not. Sorry Paula, we’re saving our calorie consumption for margaritas.
Let’s be honest with eachother for an instant. There is absolutely no pretending that people won’t chase down everything with alcoholic beverages come Saturday. Margaritas with breakfast time? Why not? it’s Cinco de Mayo and I love to pretend I’m Mexican! Come on, we realize how this vacation works… and exactly how unpleasant Sunday is likely to be.
Forget about hangovers. Focus on a breakfast time that gets you prepared for per day filled with delicious potato chips and guac. Since Cinco de Mayo happens to be this Saturday (and because I prefer a week filled with celebrations), I thought I’d share this along with you a little early.
I actually had been considering breakfast enchiladas for quite sometime. Similar to fantasizing about them every night. Anyway I decided to wrap the original huevos rancheros breakfast time (eggs + coffee beans) into tortillas and weight them with delicious business (also known as red sauce and avocados).
I’m really happy with that decision because I now want to eat these everyday for the rest of my life. And I could do that because they only have about 230 calories per enchilada. Yes!
I want to break it down for beef liver uric acid you personally.
Whole wheat grains tortillas (because we’re healthful wholegrain eating people, duh).
Fluffy scrambled eggs (with mostly protein packed egg whites).
Refried dark beans.
Low fat cheeeeeese.
Uhhhh may i just let you know that basically these enchiladas are produced from the very best stuff on the planet?
This is the fun part. The delicious business.
We combine the items I dream about into the tortillas. Drizzle with Plenty of reddish sauce, and roll them up restricted. Time to pop in the range and get ready for a tastebud party in less than 30 minutes.
Skinny Huevos Rancheros Breakfast Enchiladas
6 whole wheat grains tortillas (I love low carbohydrate, or you might use corn tortillas to make these gluten-free.)
2 whole eggs + 6 egg whites
1 can (16 oz) great red enchilada sauce
1 can (16 oz) refried black beans
1/2 reddish colored bell pepper, diced
1/2 cup cilantro, chopped
3/4 cup low-fat cheese (I like colby jack or mexican)
Pinch of salt
Directions
Preheat oven to 350 levels F. Combine refried beans, diced reddish colored peppers, cilantro, and jalapeno together in a big bowl; set aside. In a moderate bowl beat your eggs together. Coat large pan with non stick cooking squirt and add your eggs. Let eggs set around the edges, and begin to mix every couple of seconds, until eggs are barely set but still fluffy. Sprinkle with a dash of sodium and pepper. Remove from temperature and reserve.
Place your tortillas on the microwave safe dish and microwave for about 20 seconds. Next, coat 11×7 inch skillet with nonstick aerosol.
Next fill each tortilla the following way: spread 1/4 cup of dark bean mixture in the center of each tortilla, add 2 heaping tablespoons of scrambled eggs, 1 heaping tablespoon of cheese, and 2 tablespoons of enchilada sauce. Roll each tortilla up one by one and place seam aspect down in the cooking dish. You will end up with 6 tortillas.
Pour remaining enchilada sauce over the top of the rolled tortillas, then sprinkle remaining mozzarella cheese on top. Bake 25 mins. Let stand a short while, then sprinkle with extra cilantro, tomato vegetables, and avocados. Add 1 tablespoon of sour cream on top if desired.
Serves 6
You can certainly use all egg whites if desired to cut more calories in the recipe
These would also end up being delicious using a green chili enchilada sauce
